Espresso machine manufacturer Dalla Corte is coming out with another single-group machine that straddles the professional and consumer line, and offers a novel lever-style means of activating a digital control over water delivery.
In the United States, we identify with brands, and there are a core group of names that people identify with espresso. Dalla Corte is still a new name to all but the most discerning enthusiasts, but this commercial manufacturer has been at the forefront of the multi-boiler movement since 2001, and the Mina is a vision into the future of espresso.
Many commercial manufacturers have put their DNA into compact machines, so what makes Mina different? For a start, the DFR (Digital Flow Regulation – patent pending) valve, which can be closed to one hundredth of a millimeter allowing the extraction to start at zero bars of pressure. The brew lever allows fluid control of the water (sorry about the pun) flow and pressure into the coffee the during the extraction, but if you want to make your favorite routine easily repeatable the shot can be also be profiled in five stages with adjustment increments of, you guessed it, one hundredths of a millimeter. Keep your manual stick shift experience, or change modes to have a super consistent commercial workhorse. The level of control and ease of automation are where Mina differs from other paddle operated machines like the Slayer. This machine also has an amazing level of customizability in the panels using different metals and natural fibers. The drip tray can even be removed leaving the front of the machine open for pourovers! We know this sounds crazy, but the brew temperature can be adjustable by tenths of a degree and the water flow can be controlled on-the-fly.
How are these adjustments made, and these profiles created? A powerful bluetooth connected smartphone application gives the user an unprecedented amount of information and control over their machine. For those that want a pure, analog espresso experience to rival any shop (or break out from the norm), the Mina stands ready. There’s no expensive LCD display to wear out, or distract from the experience. And for those that want this amazing control to be easily harnessed and repeatable with push button consistency, Mina is an NSF certified tool that’s ready for heavy commercial work, yet it can fit under cabinets at home. Like most full commercial machines, Mina requires direct plumbing for the inlet and drip tray.

Pressure or Flow Profiling
Pressure or flow profiling allow the user control over a coffees flavor profile. Acidity, sweetness and body can be changed by altering the rate and volume of water flow. Profiling machines also have different options for saving profiles for ease of automation and repeatability.
Dedicated temperature controlled boilers for brewing and steaming means both functions can happen simultaneously, with the additional advantage of fine tunability. Sour and bitter espresso flavors can be minimized by raising or lowering brew temperature, resulting in a smoother shot. Adjusting the temperature of the steam boiler can increase or decrease the amount of steam power to suit different drink size milk drinks.
Gear pumps are capable of more advanced espresso performance by nature of the user being able to change pump pressure during the shot. Vibratory and rotary pumps primarily extract espresso at a constant 9 bar brew pressure like you’ll find in typical cafes.
PID Temperature Control
PIDs allow the most precise temperature adjustment and control of boilers by continuously calculating the amount of power needed to maintain the target temperature. They also allow more detailed information to be displayed to the user than digital temperature controlled systems.
Volumetric programming gives the option of precisely dispensing a desired amount of liquid with the push of a button. For example, the double shot button can be programmed for a double shot, and the single shot button can be programmed for a 1oz rinsing flush.
Shot timers measure the brew time from the time the pump is activated. This information is extremely helpful for dialing in an espresso grinder to the ideal 25 second 1.5oz shot, and maintaining consistency.
