In a surprisingly small footprint, with water reservoir or plumb-in options, the GS3 suits high-end home and office use and has sufficient steam power and performance for many commercial applications including restaurants, catering, and professional offices. The GS3’s mechanical paddle controls the flow and water and pressure through the grouphead via an internal valve. Manual pre-infusion allows you to bring out different flavor components which affect the balance and body of the shot, and produce a rounder, softer espresso that highlights brightness, sweetness and delicate notes.
Custom wood panels make the GS3 your own. We worked with a Portland craftsman to produce hand-made wood side panels for the GS3. The contour and lines of the panels precisely follow the stock side panels.
THE GS3 MP’S LATEST FEATURES INCLUDE:
UPDATED CONICAL VALVE – The GS3 Paddle valve has been redesigned to improve reliability.
PUMP ON FULL RANGE PRESSURE MANIPULATION – The micro-switch for engaging the pump has been moved to the beginning of the brew cycle in order to create back pressure on the valve. This allows the user to manually manipulate brew pressure with a reservoir machine. No more need to plumb in the GS3 MP for pre-infusion. You are also able to manipulate the pressure in the full range of pressure from 0 to 9 bars.
PERISCOPE MANOMETER – A new manometer has been added that sits on top of the group head in order to measure the brew pressure at the point of brewing instead of in the boiler. This combined with the Pump On Pre-Infusion feature allows for manual pressure manipulation with a reservoir machine.
NEW COOL TOUCH STEAM WAND – The cool touch steam wand has changed to improve both convenience and steaming power.

The reservoir is the water tank an espresso machine pulls water from to fill its boilers. Having a reservoir means a machine can be more portable and work in homes where plumbing isn't an option.
Direct plumbing means you can hook a machine directly a water line and never have to worry about refilling your reservoir again. These machines also allow you to connect the drip tray to a drain so you don't have to make that tightrope walk to the sink.
Saturated Group Head
Saturated group heads are essentially surrounded by an extended section of the boiler. This means they warm up much faster than E61 group heads and hold a specified temperature more precisely.

Dedicated temperature controlled boilers for brewing and steaming means both functions can happen simultaneously, with the additional advantage of fine tunability. Sour and bitter espresso flavors can be minimized by raising or lowering brew temperature, resulting in a smoother shot. Adjusting the temperature of the steam boiler can increase or decrease the amount of steam power to suit different drink size milk drinks.
The rotary vane pump offers whisper quiet performance just like your favorite cafe’s machine. This super robust design also allows plumb-ability.
PID Temperature Control
PIDs allow the most precise temperature adjustment and control of boilers by continuously calculating the amount of power needed to maintain the target temperature. They also allow more detailed information to be displayed to the user than digital temperature controlled systems.
Shot timers measure the brew time from the time the pump is activated. This information is extremely helpful for dialing in an espresso grinder to the ideal 25 second 1.5oz shot, and maintaining consistency.
Switchable Water Source
A switchable machine is not limited to either a water reservoir or plumbing. Large water reservoirs are always available for portability, but the plumbing line is also included and switching the water source between them is a breeze.
Joystick Operated Steam/Hot Water
Joystick operated valves make steam and hot water dispensing instant on and off. Simply flick the steam valve when the milk has reached the optimum temperature, and the valve will spring closed. These non compression valves are a very durable and easy to maintain design that has been used in commercial equipment for decades.
