LUCCA M58 by Quick Mill
We have long admired the build quality and brewing performance of Quick Mill machines. They are unrivaled in the craft of bending and polishing stainless steel to a perfect sheen, which we first noticed on the Andreja Premium espresso machine. We took our dream list for an E61 machine to Quick Mill and asked if they could make it. The result is the LUCCA M58.
Boasting an integrated PID (the brains of the machine) and shot timer control, it’s possible to achieve exceptional shots that fall within the optimal extraction time and temperature without reaching for a timer or guessing your brew temperature. The display even shows tenth of a seconds for the real OCD types. The display itself also lends a subtle presence on the machine. Some of the common PID controllers have bright red digits that glare at you whenever the machine is on; a bit harsh. We asked for a white LED display that would show the temperature of the espresso and steam boilers, then finished off this modern feature with a round bezel. We love digital features balanced with analog, tactile elements.
We additionally asked Quick Mill to use multi-directional joystick steam and hot water valve controls. There’s something mechanical and old-school about opening these valves that reflects the best of the machine age. The same can be said of the angled and vented side panels that are topped with a chromed cup-rail. Also available are a variety hard wood side panels, made to order by a Portland craftsman and expertly installed by our in house technicians.
Internally, the LUCCA M58 is built with quality and high performance in mind. With a rotary pump, insulated dual boilers and an E61 brew group, the M58 allows you to steam silky smooth milk with its powerful steam wand while simultaneously extracting a great quality espresso shot. For those with the ability to plumb, the M58 features a direct-line in addition to a 3 liter water reservoir with a low water sensor.
The machine is supplied with both a double-spouted and a bottomless portafilter. The heavy duty handles are weighted to balance out the feel of the portafilter, and the tip is solid chromed brass. The one-piece drip tray has a smooth front edge and cool-touch sides. The machine comes with no-burn steam wand and hot water arms as standard.
The MACAP M4D Digital Espresso Grinder has all the quality of the most sought-after Mini Mazzer, and adds to the already excellent MACAP M4. Its worm gear-driven stepless adjustment makes it one of the best stepless adjustable grinders on the market today. The worm gear makes it simple to make even a minute adjustment, and the best part is that you can do it with either hand. Being a doserless grinder, grinds retention is also minimized and the digital display gives precise control over grinding time and dose.

The reservoir is the water tank an espresso machine pulls water from to fill its boilers. Having a reservoir means a machine can be more portable and work in homes where plumbing isn't an option.
Direct plumbing means you can hook a machine directly a water line and never have to worry about refilling your reservoir again. These machines also allow you to connect the drip tray to a drain so you don't have to make that tightrope walk to the sink.
E61 Group Head
The E61 group head was designed in 1961; the fact that it's still around speaks to its reliability. This style of group head allows for mechanical pre-infusion while also exuding romantic espresso machine style.

Dedicated temperature controlled boilers for brewing and steaming means both functions can happen simultaneously, with the additional advantage of fine tunability. Sour and bitter espresso flavors can be minimized by raising or lowering brew temperature, resulting in a smoother shot. Adjusting the temperature of the steam boiler can increase or decrease the amount of steam power to suit different drink size milk drinks.

PID Temperature Control
PIDs allow the most precise temperature adjustment and control of boilers by continuously calculating the amount of power needed to maintain the target temperature. They also allow more detailed information to be displayed to the user than digital temperature controlled systems.
Shot timers measure the brew time from the time the pump is activated. This information is extremely helpful for dialing in an espresso grinder to the ideal 25 second 1.5oz shot, and maintaining consistency.
Switchable Water Source
A switchable machine is not limited to either a water reservoir or plumbing. Large water reservoirs are always available for portability, but the plumbing line is also included and switching the water source between them is a breeze.
Joystick Operated Steam/Hot Water
Joystick operated valves make steam and hot water dispensing instant on and off. Simply flick the steam valve when the milk has reached the optimum temperature, and the valve will spring closed. These non compression valves are a very durable and easy to maintain design that has been used in commercial equipment for decades.
