In Kenya, small wet mills like Kamoini are called factories, and each takes in cherry from local farmers who hand sort at home to cull anything unripe or overripe before it reaches the pulper. Peaberries themselves are a natural cherry mutation: instead of the usual two flat beans, the cherry produces a single round one.
