The farmers at FUDAM ferment their coffee for 16–24 hours and wash it two to three times before drying—sometimes mechanically over 25–40 hours, sometimes traditionally for up to 15 days. This careful attention to processing preserves the coffee's inherent character: a sweet, full-bodied cup with bright acidity and clean finish.
