This Pacamara lot from Finca Natamaya represents the pinnacle of Hermann and Nena Mendez's multi-year commitment to experimental coffee production in El Salvador. Named for their daughters Natalia and Mayita, the farm was purchased specifically to push quality boundaries—and this rare Pacamara hybrid varietal, planted on the farm's highest slopes, is the result. Ruby Coffee Roasters has followed this plot from empty land to first harvest, and now offers ten exclusive bags of a coffee that took five years to produce.

The Pacamara varietal itself is a cross between Pacas and the giant-bean Maragogipe, known for its complex cup profile and sought-after status in Central American auctions. At Natamaya, controlled fermentation and meticulous cherry selection elevate an already exceptional variety into something truly special.

Tasting Notes

Expect layered complexity: chocolate malt anchors the cup with sweetness and body, while raspberry acidity brightens the mid-palate. Cinnamon spice weaves through the finish alongside nut brittle—a caramelized, textural note that lingers. The medium-light roast preserves the washed process clarity while developing roast sweetness. Body is silky with a syrupy mouthfeel characteristic of Pacamara's larger bean structure. Acidity is juicy and vibrant without sharpness, finishing clean with lingering spice.
