Sumatra's volcanic soils and humid climate create ideal conditions for the natural process, where coffee cherries dry intact around the bean, infusing it with intense fruit-forward character. This lot delivers exactly that: a boozy, complex cup that pushes boundaries while maintaining balance.
Tasting Notes
Expect cherry and fruit punch to dominate the front palate, with a distinctive boozy quality that evokes fermented stone fruit. The body is full and syrupy, coating the mouth with lush texture. Acidity sits lower than typical washed coffees, providing a mellow backbone that lets the fermentation-driven flavors shine. The finish lingers with dark fruit sweetness and subtle earth tones characteristic of Indonesian coffees.
Brew Methods
Wild performs beautifully as espresso, where the syrupy body translates to rich crema and the fruit notes concentrate into something almost liqueur-like. For filter methods, try a French press or Clever dripper to emphasize body and let those fermented flavors fully develop. Pour-over works too—just use a slightly coarser grind and hotter water (205°F) to extract the complexity without pulling excessive bitterness. Cold brew brings out the fruit punch character in a surprisingly refreshing way.
