Roasted by Wisconsin's Ruby Coffee Roasters, this single-origin showcases the java varietal from Huila's high-altitude terroir, processed through a meticulous multi-stage fermentation that amplifies its naturally vibrant character.
Jhoan Vergara grew up watching his parents transform their 15-hectare farm from commodity production to Cup of Excellence contender. When coffee leaf rust devastated Las Flores in 2008, the family replanted with disease-resistant, high-quality varieties including java. Jhoan's formal training at SENA—Colombia's National Training Service—deepened his understanding of agronomy and processing, and connected him with fellow innovator Nestor Lasso. Together, they've pushed the boundaries of what Colombian coffee can express.
Tasting Notes
This is a coffee of remarkable clarity and complexity. The cup opens with honeydew melon sweetness and delicate elderflower cordial aromatics—floral without being perfumy. Mid-palate, tropical guava and bright tangerine acidity emerge, creating a layered sweetness that evolves as the coffee cools. The body is silky and light, with a clean finish that invites another sip. Ruby's light roast preserves every nuance of the intentional processing.
The Processing Journey
Each stage serves a purpose: 12 hours of oxidative fermentation intensifies flavors, 48 hours of anaerobic fermentation in sealed tanks develops sweetness and florals, followed by 36 hours of open-air fermentation for balance. Thermal shock—alternating hot and cold water rinses—locks in complexity before mechanical drying. The result is a coffee that tastes both familiar and entirely new.
Brew Methods
This coffee excels in methods that highlight its delicate florals and fruit-forward profile. Pour over (V60, Kalita Wave) at 1:16 ratio showcases the elderflower and citrus notes with crystalline clarity. AeroPress with a gentle 2-minute brew time emphasizes the melon sweetness. While it's roasted for filter methods, adventurous espresso drinkers will find juicy, tea-like shots at 1:2.5 ratios—think fruit-forward rather than chocolatey.
