This Colombia Tolima from Anodyne Coffee tells the story of collaborative farming done right. Sourced from the Tolima Grande Association—a collective of 119 producers spanning the municipalities of Planadas in Tolima and neighboring Huila—this organic, washed-process coffee represents a community committed to quality, sustainability, and generational knowledge transfer. Grown between 1,200 and 2,100 meters in the fertile soils of San Agustín, the coffee comprises heirloom and hybrid varieties: Caturra, Castillo, Colombia, and Typica, all cultivated without chemicals.

Tasting Notes

Expect a balanced, approachable cup with layers of plum sweetness, roasted cashew richness, and smooth chocolate milk on the finish. The medium roast preserves the coffee's natural brightness while developing body and depth. The acidity is gentle and rounded—think ripe stone fruit rather than citrus snap—making this an easy drinker that still offers complexity. The finish is clean and lingering, with subtle nutty undertones that invite another sip.

This coffee shines across multiple methods. As espresso, it pulls sweet and balanced with creamy body—ideal for milk drinks where the chocolate and plum notes complement steamed milk beautifully. For pour over (V60, Chemex, Kalita), expect clarity and fruit-forward brightness with a silky mouthfeel. French press brings out the cashew richness and fuller body, while drip or batch brew delivers consistency and crowd-pleasing approachability. We recommend a medium grind for pour over, medium-coarse for French press, and dialing in your espresso between 18-20 grams depending on your machine.
