This isn't the decaf you're thinking of. Sourced from the Oromia Coffee Farmers Cooperative in Ethiopia's Sidama region and decaffeinated via the Swiss Water process, this naturally processed coffee preserves the explosive fruit character Ethiopian coffees are famous for. Royal Coffee selected this lot specifically for decaffeination because the cherry and bean quality could withstand the process without losing identity. The result is a medium roast that drinks like a caffeinated single origin—dynamic, layered, and thoroughly satisfying whether you're avoiding caffeine or just want a second cup at 9 PM.
Tasting Notes
The natural processing shines through with pronounced blueberry and floral aromatics up front, backed by cocoa richness and brown sugar sweetness in the body. The acidity is bright but balanced—typical of high-altitude Ethiopian coffees grown between 1550 and 2200 meters. The finish lingers with a subtle berry tartness and chocolate undertone. This is decaf that tastes like it came from a place, not a processing plant. Medium body with a clean mouthfeel that never turns thin or watery, even as it cools.
Brew Methods
This coffee excels across every brew method, which is rare for decaf. As pour over (V60, Chemex), the floral and blueberry notes pop with clarity. In French press or Aeropress, the cocoa and brown sugar sweetness take center stage with more body. It even works beautifully as espresso—pull it at a 1:2 ratio around 25–28 seconds for a sweet, fruit-forward shot with minimal bitterness. The Swiss Water process leaves the sugars intact, so it caramelizes well under pressure without the papery or flat notes you get from chemically decaffeinated beans.
