Ethiopia Biruhi from Goshen Coffee is what happens when meticulous processing meets exceptional terroir. Sourced from smallholder farmers in Ethiopia's storied coffee regions, this lot lives up to its name—Biruhi means "bright" in Amharic—with a luminous cup that showcases everything we love about naturally processed Ethiopian coffees. Goshen's light roast preserves the bean's inherent clarity, letting origin character shine through in every sip.

Tasting Notes

Expect an explosion of tropical fruit: ripe mango, papaya, and hints of passionfruit dominate the aromatics. The acidity is sparkling and champagne-like, lifting the cup without sharpness. Delicate florals—jasmine and bergamot—linger on the finish, creating a perfumed complexity that evolves as the coffee cools. The body is tea-like and silky, clean without being thin. This is a coffee that rewards attention, revealing new layers with each temperature change.

Brew Methods

Ethiopia Biruhi excels in brew methods that highlight clarity and nuance. Pour over (V60, Kalita Wave) is ideal for showcasing the floral highs and fruit-forward complexity. Dial in a medium-fine grind and aim for brew times around 2:30–3:00 minutes. As espresso, pull shorter ratios (1:2 to 1:2.5) at lower temperatures (198–200°F) to preserve delicate florals while emphasizing fruit sweetness—expect a tea-like shot with citrus brightness. French press works if you prefer more body, though you'll sacrifice some of the top-note clarity. Avoid over-extraction; bitterness will mask the coffee's best qualities.
