Ethiopia is the birthplace of Arabica coffee, and this washed-process lot from Yirgacheffe honors that legacy with precision and elegance. Roasted by Methodical Coffee, Origins pays tribute to the cultural significance of wild arabica and the generations of farmers who've stewarded these heirloom varieties. This is the washed expression—clean, bright, and unmistakably Ethiopian.

Sourced through Balzac Brothers from the Yismashewa Washing Station in Gedeo, this coffee comes from a producer with over three decades of experience in cultivation, green coffee procurement, and meticulous quality control. Lego Tiba Malde Yismashewa built her own washing station to ensure traceability from cherry to export, and that commitment shows in the cup.

Tasting Notes

Expect delicate florals—jasmine and bergamot—with stone fruit sweetness and a crisp, tea-like body. The acidity is vibrant but refined, reminiscent of lemon verbena, and the finish lingers with hints of white peach and honey. This is a coffee that rewards attention: each sip unfolds layers of complexity without ever feeling heavy.

Brew Methods

This washed Ethiopian shines in pour over methods like V60 or Chemex, where its clarity and floral aromatics take center stage. It's also exceptional as a light-bodied espresso if you're after brightness and fruit-forward complexity. French press will amplify the tea-like body and stone fruit notes. Avoid over-extraction—aim for a medium grind and water just off boil to preserve the delicate florals.
