Faver Ninco's Gesha from Finca Costa Rica in Central Huila is a study in varietal character—floral, structured, and unmistakably elegant. This lot comes from the peak of main harvest, a window when the coffee cherries express maximum sweetness and complexity. Tandem Coffee has been sourcing from Faver for multiple seasons, releasing differentiated lots from sequential harvest passes, and this separation showcases why his coffees consistently rank among the year's best.

The Gesha variety is revered for its delicate florals and tea-like clarity, and this lot delivers both while adding layers of tropical fruit and citrus brightness. It's syrupy without being heavy, structured without losing lift—a balance that speaks to meticulous processing and Faver's deep understanding of his land.

Tasting Notes

Pink florals open the cup, reminiscent of jasmine and rose water. The acidity is crisp and lively, threading through sweet citrus—think candied orange peel and Meyer lemon. Tropical notes follow: guava, lychee, a whisper of passion fruit. The body is medium and slightly syrupy, coating the palate but never weighing it down. The finish is clean, floral, and long, with a lingering sweetness that invites the next sip.

Brew Methods

This Gesha shines as pour over—V60, Kalita, or Chemex—where its florals and layered fruit can unfold without interference. Aim for a 1:16 ratio, water just off boil (200–205°F), and a total brew time around 3 minutes. If you're dialing it in for espresso, expect a tea-like, fruit-forward shot that's more delicate than punchy—best as a straight espresso or in a cortado to preserve its nuance. French press works too, but use a coarser grind and shorter steep (3 minutes) to avoid muddying the florals.
