This fully washed Mexican coffee from Parisi Coffee brings the warmth of Oaxaca's Sierra Sur highlands to your cup. Sourced from the Red 5 de Diciembre cooperative—a collective of 2,519 small-scale producers working across Oaxaca's subregions—this medium roast showcases the balanced, approachable character that makes Mexican coffee a daily-drinker favorite.
The lot is a blend of traditionally washed coffees from multiple producers at around 1,300 meters above sea level, featuring Bourbon, Typica, and Mundo Novo varietals. The result is a clean, sweet profile that works beautifully both hot and iced.
Tasting Notes
Expect rich caramel sweetness up front, followed by milk chocolate and roasted peanut, with a nougat-like finish that lingers gently. The body is medium and smooth, the acidity soft and balanced—nothing sharp or bright, just round, comforting sweetness. It's the kind of coffee that tastes familiar even if you've never been to Oaxaca.
Brew Methods
This coffee shines in drip brewers, pour-over (V60, Chemex), and French press, where its caramel-chocolate core can bloom without being overpowered. It also makes an excellent cold brew—the nougat and chocolate notes take on a creamy, dessert-like quality when steeped overnight. For espresso, dial in slightly coarser than you would for a fruit-forward single origin; you'll be rewarded with a sweet, nutty shot that plays beautifully in milk drinks.
