Organic Honduras Liquidambar Yellow Honey is a revelation in Central American coffee—a single-farm micro-lot from Finca Liquidámbar that showcases what meticulous processing and high-altitude terroir can achieve. Produced by Roberto Rene González in the mountains of Guascotoro, La Paz, this certified organic and Fair Trade coffee arrives through our partnership with Royal Coffee and Centri Coffee, roasted fresh to order in our Portland roastery.

Roberto's 37-acre farm sits at 1,510 meters above sea level, where Bourbon, Catuai, and Pacas varietals thrive in the mineral-rich soil. What sets this coffee apart is the yellow honey process—a pulped natural method where controlled mucilage is left on the beans during drying in solar dryers that protect from rain while allowing careful fermentation. The result is a flavor profile that bridges natural fruit intensity with honey-process sweetness.

Tasting Notes

This is a fruit-forward coffee with surprising depth. The cup opens with bright cherry juice character—not tart, but sweetly concentrated like cherry preserves. As it cools, cola-like complexity emerges with subtle herbal undertones and a dark chocolate finish that anchors the brighter notes. The body is notably deep and syrupy for a Central American coffee, a direct result of the honey processing. Acidity is balanced and wine-like, supporting rather than dominating the cup. The finish lingers with bittersweet chocolate and dried fruit resonance.

This medium roast excels in filtered drip methods where its layered complexity can shine—think Chemex, V60, or your favorite automatic drip brewer. The substantial body also makes it a standout in French press, where the full immersion brings out the cola and chocolate notes beautifully. For espresso enthusiasts, the honey processing provides enough natural sweetness and body to pull balanced shots, though we'd dial slightly coarser than you might for a natural process. Cold brew brings out the cherry and raisin characteristics while mellowing the herbal notes into a smooth, chocolatey base.

About the Producer

Roberto Rene González returned to his family's farm after earning a business degree, becoming general manager of RAOS cooperative while stewarding Finca Liquidámbar toward sustainability. He's working to establish 19 acres as a biological reserve and provides year-round employment for seven families, with 30 additional workers during harvest. His commitment to organic farming and Fair Trade principles shows in every carefully processed cherry.
