Redcab® Espresso from Barefoot Coffee Roasters delivers approachable complexity from the highlands of Veracruz, Mexico. This washed-process blend combines bourbon, caturra, catimor, and typica varietals grown at 900–1,200 meters above sea level, creating a sweet, balanced shot that shines straight or in milk. The APG cooperative partnership ensures meticulous quality control from cherry sorting through extended fermentation and raised-bed drying, resulting in a consistently excellent espresso that highlights Mexican coffee's underappreciated potential.

Tasting Notes

Expect sweet caramel and roasted hazelnut upfront, tempered by a thread of mild citrus brightness that keeps the cup lively. The body is creamy and substantial without heaviness, coating the palate with a silky texture that carries through to a gentle milk chocolate finish. Acidity is soft and well-integrated—present enough to provide structure but never sharp. This is an espresso that rewards both the perfectionist pulling God shots and the morning rusher who just wants something delicious in their latte. The flavor profile remains stable and forgiving across a range of extraction parameters, making it ideal for dialing in new equipment or experimenting with ratios.

Brew Methods

Redcab® was designed for espresso and truly excels there. Barefoot recommends 20 grams in, 31–34 grams out in 25–27 seconds after 5–7 days rest post-roast. The creamy body and caramel sweetness make it exceptional in milk drinks—cappuccinos and cortados especially benefit from how the hazelnut notes integrate with steamed milk. While optimized for espresso, this coffee also performs well as a moka pot brew or in an AeroPress with a short steep time, where its sweetness and body translate beautifully. For traditional drip or pour-over, consider Barefoot's filter roast offerings instead—this roast profile is dialed for pressure extraction.
