REFISA is a stunning example of why West Arsi is quickly becoming one of Ethiopia's most exciting coffee regions. Roasted by Miami's Panther Coffee, this organic, washed-process coffee comes from smallholder farmers surrounding the Refisa washing station in Nensebo, where volcanic soil, high elevation (1800-1900 meters), and meticulous processing create a cup that's simultaneously bright, soft, and intensely flavorful.
The coffee cherries are hand-sorted upon delivery, then fermented underwater for 48-72 hours before being washed, soaked, and dried on raised beds for 8-10 days. The result is a medium-light roast that showcases everything special about Ethiopian heirloom varieties and local cultivars—juicy stone fruit, vibrant citrus, and a silky body that lingers like honey on the finish.
Tasting Notes
This coffee opens with pronounced nectarine and clementine on the nose, delivering exactly what it promises. The first sip brings a juicy, almost nectar-like sweetness with layers of stone fruit that taste like biting into a ripe peach at a farmers market. Mid-palate, honey sweetness emerges, coating the mouth with a soft, silky texture that feels luxurious without being heavy. The acidity is bright but not sharp—think citrus zest rather than lemon juice—and the finish is clean with a gentle floral note that invites the next sip. The body is medium with exceptional clarity, allowing each flavor to shine without crowding.
Brew Methods
REFISA's clarity and brightness make it exceptional as a pour over (V60 or Kalita Wave), where you can really appreciate the layered stone fruit and floral notes. It also performs beautifully in a Chemex for a clean, tea-like cup that highlights the nectarine sweetness. For espresso, pull shorter ratios (1:2 to 1:2.5) to concentrate the honey sweetness while maintaining that silky texture—this coffee is forgiving and doesn't turn sour easily. French press enthusiasts will enjoy the fuller body and amplified sweetness, though you'll sacrifice some of the delicate citrus brightness. We recommend water just off boil (200-205°F) and a medium-fine grind for pour over, slightly coarser for French press.
