This isn't a blend born from commodity contracts—it's sourced exclusively from family farms in the Santa Ana region of El Salvador, where Topeca's vertically integrated supply chain ensures quality from cherry to cup. The blend anchors itself in washed-process coffees from Ayutepeque, grown at 1000-1500 meters above sea level by producer Emilio Lopez Diaz. Bourbon, Pacas, and Marsellesa cultivars provide the rich, nutty foundation—think toffee and dark chocolate. Then Topeca adds a splash of natural-process coffee from El Manzano, which lifts the cup with bright cherry cordial sweetness and contributes a syrupy, velvety texture that coats the palate.

Signature Espresso is genuinely versatile. As espresso, it pulls beautifully with moderate parameters—Topeca recommends 19g in, 40g out in 25 seconds as a starting point. You'll get thick crema and a structured shot that holds up beautifully in milk. It's equally excellent as drip coffee, where the chocolate and nut notes bloom, or as cold brew, where the natural-process cherry sweetness really shines through. This is the rare espresso blend that doesn't compromise when you change brewing methods.
