Description

Barefoot Coffee Roasters' The Highlands Espresso brings the rugged terroir of Papua New Guinea's Eastern Highlands to your cup. Grown at 1,100 meters above sea level on volcanic loam by small-scale farmers cultivating coffee gardens alongside subsistence crops, this organic lot showcases the unique wet-hulled processing method that gives PNG coffees their signature thick body and bold character. Floral aromatics open the experience before giving way to unexpected notes of cola, black cherry, and citrus—a complexity that speaks to both the land and the careful two-step sun drying on raised beds.

Tasting Notes

This espresso leads with delicate floral aromas that belie the powerful body beneath. On the palate, you'll find dark cola sweetness intermingling with tart black cherry and bright citrus acidity. The wet-hulled process contributes a syrupy, almost chewy mouthfeel that makes this coffee cling to your palate long after the cup is empty. The finish is clean despite the heavy body, with lingering stone fruit and a whisper of that opening floral character. It's a coffee that rewards attention—complex enough to sip straight as a cortado or cappuccino, yet bold enough to cut through milk in larger drinks.

Brew Methods

The Highlands Espresso is formulated specifically for espresso extraction, where its thick body and layered flavors truly shine. Barefoot recommends 18-20 grams in, 32-35 grams out, over 26-28 seconds, with 5-7 days post-roast rest. This coffee excels in milk-based drinks—its cola and cherry notes create exceptional cappuccinos and flat whites. While optimized for espresso machines, adventurous brewers will find success with moka pot or AeroPress methods that emphasize body and concentration. The volcanic soil minerality holds up beautifully under pressure.

About the Roaster

Barefoot Coffee Roasters has built a reputation on sourcing traceable, relationship-driven coffees and roasting them with precision. Their commitment to organic, sustainably grown beans aligns perfectly with PNG's traditional small-holder farming practices.
