For over twenty years, El Manzano has been a cornerstone of Topeca Coffee Roasters' lineup—and for good reason. Situated in the Santa Ana region of El Salvador at elevations between 1,350 and 1,500 meters, this family-owned farm has built a reputation on meticulous processing and varietal experimentation. After acquiring the property in 2001, the López-Diaz family established Cuatro M Cafes, a state-of-the-art micro-mill that's become synonymous with award-winning naturals and impeccably clean washed coffees.

This particular lot showcases the farm's classic washed profile: Bourbon and Pacas varieties processed with precision, yielding a coffee that's approachable yet nuanced. The higher elevation contributes to denser beans and brighter acidity compared to lower-altitude Salvadoran coffees, while the traditional washed method highlights the terroir's inherent sweetness.

Tasting Notes

Expect a gentle, nutty sweetness reminiscent of almond, with delicate honeysuckle florals that emerge as the cup cools. There's a whisper of citrus brightness on the mid-palate, leading to a robust, slightly earthy pipe tobacco finish that lingers pleasantly. The body is medium and clean, the acidity balanced and refined—this is the kind of coffee that reminds you why washed Central Americans became foundational in specialty coffee. It's comforting without being boring, complex without demanding your full attention.

Brew Methods

El Manzano shines across nearly every brew method. As pour over (V60, Kalita), it showcases clarity and floral aromatics. French press brings out the fuller body and tobacco notes. It pulls beautifully as espresso—sweet, balanced, and forgiving across a wide range of ratios—making it ideal for milk drinks or straight shots.
