Description

From the cloud-draped peaks of Huehuetenango, Guatemala's most isolated coffee region, comes this exceptional organic offering from the Association of Special Coffee Producers of Huehuetenango (ASOPCE). Over 450 smallholder families, each farming just a few acres at altitudes between 1,350 and 2,050 meters, collaborate to bring this coffee from mountainside to cup—navigating rugged terrain, extreme weather, and rough roads that would defeat most cooperatives. What makes ASOPCE remarkable is their commitment to quality at every stage: each family operates their own micro-mill, controlling cherry selection, depulping, fermentation, and sun-drying with meticulous care before pooling their parchment at a central warehouse powered by 250 solar panels.

Tasting Notes

This medium-light roast opens with rich chocolate and caramel sweetness that gives way to bright citrus acidity—a classic Guatemalan profile elevated by careful processing and ideal growing conditions. The body is well-textured and satisfying without heaviness, while the finish lingers with caramel sweetness and a hint of orange zest. It's an all-day drinker that defies the "average Guatemala" stereotype, offering complexity without demanding expert palate calibration. The Bourbon, Catuai, Caturra, Pache, and San Ramon varietals grown here contribute layers of flavor that unfold as the cup cools.

Brew Methods

This coffee truly shines in filtered methods where its clarity and balance can take center stage. Pour over devices like the V60 or Chemex bring out the citrus brightness and delicate sweetness, while the AeroPress delivers a fuller body with pronounced chocolate notes. It also performs beautifully in automatic drip brewers—making it perfect for morning routines. While it can pull as espresso, its structured acidity and medium body are better showcased through filter methods that allow the nuanced flavor profile to speak clearly.

About the Producer

ASOPCE's partnership with BICAFE and their investment in sustainable practices—including solar power and organic fertilizer made from coffee pulp—demonstrates how cooperative organization can overcome geographic challenges while maintaining organic certification and exceptional quality standards.
